5 lb Sugar
6 lb Red berries
2 Vanilla pods, chopped
1 Lemon
Water

Preparation and recipe

Add the sugar and the red berries together into a pan and mix the sugar evenly through the fruit. Add the chopped vanilla pods including the vanilla seeds to the mix and finally add the juice of the lemon mixing all the time. It is best if you leave this pan of ingredients to stand overnight to allow them to infuse.

Cooking red berry jam

Add water and boil the pan of fruit ingredients for at least five minutes, stirring the jam from time to time to prevent it burning. It will be extremely hot and great care is required as you could be severely burned by this molten jam.
Testing the jam is a skill learned by trial and error but the best way is to take a spoonful of the boiling jam and place it on a small cold plate which you had inside the refrigerator.
